Simple Florida Spring Citrus Herb Fish
Light, bright, and perfect for a warm Florida evening, this dish comes together in about 20 minutes and tastes best served outside with a simple salad and good bread.
Serves 4
Ingredients
4 swordfish or grouper fillets
3 tablespoons olive oil
Zest and juice of 1 lemon
Zest and juice of ½ orange
1 tablespoon capers, drained
1 small clove garlic, finely minced
2 tablespoons fresh parsley, chopped
Salt and freshly cracked pepper
Instructions
Pat the fish dry and season both sides with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Sear the fish for about 3–4 minutes per side, depending on thickness, until just cooked through.
In the last minute of cooking, add garlic and capers to the pan.
Remove fish from heat and drizzle with lemon and orange juice. Finish with citrus zest and fresh parsley.
Serve immediately with roasted potatoes, rice, or a simple spring salad.
